- 6 ears of corn
- 2 avocados
- 4 tablespoons olive oil
- 2 limes
- 2 t honey
- 1.5 t chilli powder
- 1 t paprika
- 1 jalapeño
- kosher salt and black pepper
- 2 T chopped chives
- 1/2 cup cilantro roughly chopped
- cotija cheese

- 1. grill corn on grill
- 2. slice the kernels off the corn into a large bowl
- 3. in a food processor add the avocado, 1 T of olive oil, half the lime juice and a pinch of salt. mix until smooth a purée like
- 4. add 3 T of olive oil, remaining lime juice, honey, chilli powder, paprika, jalapeño and chives to the bowl with the corn
- 5. once combined add avocado purée to the corn mixture until well combined
- 6. add cotija to your desired amount and mix in
- 7. add extra cotija to the top and don’t mix in
- 8. serve with chips
